From slow fermentation and sun-drying on raised beds, every step of our post-harvest processing is a labour of time and dedication.

STEP 01

Hand-Harvesting

Each cherry is individually selected at the peak of ripeness by our field team, ensuring only the finest fruit enters the process.

STEP 02

Slow Fermentation

Inoculated anaerobic fermentation over 72 hours develops complex notes of stone fruit and dark chocolate.

STEP 03

Sun-Drying

Laid out on African raised beds, each parchment is rotated by hand and dried slowly under the Karnataka sun for 18–22 days.

STEP 04

The Final Cup

Roasted in micro-batches within 7 days of your order. Every bag is a living expression of its origin.
